When I find something funny I like to share. Even when it has absolutely nothing to do with scrapbooking, crafting etc. So have you seen/heard this song by comedian Jon Lajoie? Perhaps it’s just my odd sense of humour but this cracked me up.

After I posted my informative blurb about the story of Hanukkah in the forum (a real page turner for sure) I had some requests for a recipe for Potato Latkes – the traditional Hanukkah treat. YUMMO. I’m salivating just thinking about them. Healthy? Not so much.
Delicious? You betcha!
INGREDIENTS:
2 eggs
1 small onion, grated
3 large baking potatoes, peeled (about 8oz/250g each)
1 tsp salt
1/4 tsp freshly ground black pepper (or to taste)
3 tbsp matzo meal (or flour)
vegetable oil
* You might find Matzo Meal in the Jewish/kosher aisle at the supermarket. It is just Matzo bread ground up into fine crumbs.*
INSTRUCTIONS:
You can make yours ultra smooth in texture using the food processor or if you like a more hashbrown-y texture you can grate the potatoes. If you want your potatoes grated, beat the eggs with the grated onion and grate the potato into the egg mixture.
We do ours in the food processor. To do it that way, chop the onion, blend in beaten eggs, cut the potatoes into even sized chunks and process them in the food processor with the eggs and onion until they are finely chopped but not ground. As you can see ours is totally MUSH and YUM it is fantastic so you really can’t mess this up. I love it smooth. More pancake-like.
Whichever method you choose, at this point blend in the salt, pepper & matzo meal.
Heat about 1/2 inch of oil in a large skillet. Don’t be shy with the oil. Add batter by the
spoonful and flatten with the back of a spoon. Cook until crisp (2-3 min). Turn and cook
other side.
Drain pancakes on a rack or on paper towels (soak up some of that extra oil). If you need to, add more oil to the pan between batches. Serve hot with sour cream or applesauce.
Makes about 16 to 20
